A popular resolution that creates quite the buzz every year is achieving health and fitness goals, however, sometimes life gets in the way and these goals tend to fall through. Therefore, this week on our blog we want to help keep those old habits away by sharing a health conscious recipe made from ingredients picked up at Malibu’s own, Vintage Grocery. A Brown Rice Tabbouleh makes for a perfect snack meal or just another way to spice up plain rice with fresh ingredients. Ingredients
1. 3 cups cooked brown rice
2. ¾ cup chopped cucumber
3. ¾ cup diced tomato
4. ½ cup chopped fresh parsley
5. ¼ cup chopped fresh mint leaves
6. ¼ cup scallion
7. ¼ cup extra virgin olive oil
8. ¼ cup fresh lemon juice
9. ½ tsp. Kosher salt
10. ¼ tsp. freshly ground black pepper
Instructions
1. Combine rice, cucumber, tomato parsley, mint, scallions, extra virgin olive oil, lemon juice, Kosher salt and pepper in a large bowl
2. Toss well and chill
